This is not a conventional pesto. This is not based on any traditional methods and this is certainly not trying to recreate anything Italian. But who decided pesto could only use Italian flavours anyway?

This pesto was designed to shake up your noodles and rice dishes. Too long have we been restricted when going into a supermarket to choose between teriyaki or tonkatsu sauce. This pesto is sweet, it’s salty, it leaves the palate feeling fresh, but most importantly this jar of crushed Thai flavours encapsulates every ounce of 'Umami'.

We make all of our pestos by hand locally in Sydney. We use a small kitchen in Marrickville where we bring in all fresh ingredients from local markets and suppliers to create a product that is rich in Sydney culture. The process of making our pestos is almost exactly the same as making it yourself at home. Except, during the process of grinding all of our fresh ingredients together we cook them. This allows us to bottle the pesto without using preservatives and yet still be able to store it out of the fridge before being opened.
