This is our take on a traditional red pesto, except this one packs far more of a punch. This is not your classic watery red pepper pesto that is too sweet and pretends to be spicy. No, this is a rich, cheesy, bold sauce that gives a good kick as well.

The red pesto originates from Sicily and is more commonly known as 'Romesco'. Romesco is usually made with fresh tomato and finely ground almonds to give it a very smooth texture. We decided to use sundried tomatoes to give our take on this pesto a subtle chew and more of a richness. We have replaced the finely ground almonds with sunflower seeds which have been soaked in extra virgin olive oil, toasted and then coarsely ground for more texture.

We make all of our pestos by hand locally in Sydney. We use a small kitchen in Marrickville where we bring in all fresh ingredients from local markets and suppliers to create a product that is rich in Sydney culture. The process of making our pestos is almost exactly the same as making it yourself at home. Except, during the process of grinding all of our fresh ingredients together we cook them. This allows us to bottle the pesto without using preservatives and yet still be able to store it out of the fridge before being opened.
